The Final Product

Cheddar Broccoli Soup

This week we have a delicious and healthy meal that can easily be made at home or in the dorms all in one pot or crock pot. When making this recipe, I like to add extra broccoli and cheese. If you try this and think the soup is too thick, slowly add more chicken broth and stir until you reach the desired consistency. You could also add even more to truly make the soup your own, such as chicken or bacon.

Ingredients:

1/4 cup chopped onion

1/4 cup butter cubed

1/4 cup all purpose flour 

1/4 teaspoon salt

1/4 teaspoon pepper

1-1/2 cup milk

3/4 cup chicken broth

1 cup cooked chopped broccoli

1/2 cup shredded cheddar cheese

Directions:

1. In a pot saute onions in butter until they are soft. Stir in flour, salt and pepper until evenly mixed, then gradually add milk and broth, and stir. Bring to a boil and cook until thickened, about 2 minutes, stirring continuously.

2. Add broccoli, cook and stir until heated through. Remove from heat and stir in cheese until melted.
